I am leaving my 30' cruiser in the slip for winter. I can winterize everything except one question? How do I winterize the lower unit while in the water????

Does your engine have antifreeze in it?
You might want to drain your exhaust if you're somewhere that gets very cold.

The lower unit does not require winterizing. It is self draining when out of the water, and as long as the water around the lower unit does not freeze. there is not an issue.
