We recently bought a new 180 Bayliner with Mercury four stroke 115 hp outboard. After reading the manual I took it out for the first time several weeks ago and to me the guage does not reflect the actual trimmed motor position. If I am in full down the motor is in proper position. When I trim to the half way mark per the guage the engine is almost out of the water. As I trim the motor completely out of the water the guage begins to move to the "up" mark? Is that normal? Shouldn't the engine stay in the water as I reach the full up position on the guage? The place we bought the boat says the guage reflects the trim up to the first mark above "down", after that they say the guage reflects tilt, not trim the rest of the way. Help?

How far the motor moves in relation to gauge reading is different on every boat. You have to figure out (on the gauge) where trimming stops and tilting starts.
If adjusted correctly, the gauge should reflect the motor position from all down to all up. Exampl; when tilting up, when motor reaches full up gauge should also read full up..
Tilt motor all the way up (when on trailer). Look underneath the motor where the motor pivots and you should see a plastic switch which is adjustable most likely.

my (newbie) thoughts were that the trim guage reflects only the 15 to 20 % trim which takes place in the water, not anything to do with tilt?
