I plan on installing a fuel monitoring gauge on my 2850/460 and I'm struck by the difference in 1.price and 2.features between Flow-Scan and Faria. Any input would help!

Both of those are old and limited. Look at the Lowrance LMF-200 or LMF-400 kits. They do more, cost less. I've had that system in three boats now and wouldn't consider anything else other than the equivalent Garmin system, which is a lot more expensive but has a nice color screen.
We installed the Garmin flow sensors on our 32. They tied into the Garmin chartplotter. Price was good and I believe that they are accurate and saved us some money on fuel during our last trip to the islands.
If you don't already have or are not planning on a chartplotter in the future then I would go with the Flow Scan. Have a lot of friends with them and they love them.

If you have a Garmin chartplotter the GFS-10 is a no brainer. Flow scans are spendy but are very nice units.
