    What temp should the engine run at on a 1998 Mercruser with a Chevy 5.0? What is the thermostat rating?

    Impossible question to answer without more info!

    Which 5.0L fuel delivery system?

    FI with temp sensing.... or carbureted?

    Salt water.... or River/Lake water use?

    Open or Closed Cooling system?

    You are correct by asking, and correct by running a thermostat.

    DO NOT run without a Thermostat.... no matter who may suggest otherwise..... and/or what you may read!

    No boat nor engine builder will suggest running our engines without the correct temperature thermostat installed.

          I've found online that the thermostat is a 160. My gauge says 175 so I might be running hot. I will first install a new tstat and if that doesn't work, what next? What all can I do without pulling the boat out of the water? Can I flush / clean out the cooling system with the boat in the water.

            You should be running ~175 with a 160 thermostat. You don't need to do a thing.
