Not that Im going to tow any five hundo pound tubers but I am just curious on the load limit per eye.

Your engine doesn't have enough pulling power to do any damage to those eyes or transom (unless it is rotted) even if you were to cable it a pier and give it full throttle.
You are way over thinking pulling a tuber, it's the weekend, go have some fun.
