Oh I agree...I envision it more when the wife and I just want to sit on the water and stay still....if we had people tubing or such I wouldn't even have it attached...
I'm still in the conceptualizing stage.....

Whiskey,....it sounds like you rather sit on a comfy seat than the extended swim platform......that being said, what time can I pick up the swim platform for let's say $300 on Saturday ?

I would only do it if you could do through bolts with backing plates on the mounts AND the seat doesn't hinder opening the engine cover for safety reasons. On my 2011, the built in swim platform is cored with wood but directly behind the engine couldn't be accessed because it is filled with foam. To mount my downrigger board, I only had about 28" of access to the backside of the platform on each side. The ladder may also pose a challenge on the starboard side. There will be a lot of stress on the mounting points so take a lot of consideration on how to address that.
Custom work like this is 100x easier (and cheaper) if you've got access to a metal shop and machinery. Depending on what the seat offers for mounting, I would think you'd be able to come off the platform with 2 pedestals.
A pic of my downrigger application. The rails that are mounted to the boat are through-bolted with 1/4 aluminum plate adhered to the hull with 5200 as a backing. Everything but the rails are removable.

True, that is the concept, albeit much cheaper than a new boat...and that is the intent...get rear facing seats without buying a new boat...though based on past such endeavors I have undertaken I'm sure in a few weeks I'll have a collection of materials in the garage for the project and never actually do it...or get frustrated and just go out and buy a new boat and tell the wife..."well you said you'd like rear facing seats!".....

Nah....I'm keeping the platform...If this idea ever materializes it'll be removable and only be on when me and the Admiral are out on the water
