The instructions say just put a little bit of the 3m 5200 adhesive/sealant in the hole but the cautious side of me want to coat the back of the mounting plate all together or at least a little ring around the hole itself. Is there any down side to doing this?

Only down side is if you ever want to remove it. 5200 is not easy to 'undo'.
I coated the back of the plates and also injected some into the screw holes. In addition after the install was complete and cleaned up I used a small amount to caulk around the plates all around and cleaned it up well.
