Zucchini "Crab" Cakes
2.5 cups shredded zucchini
1 egg lightly beaten
2 tablespoons chopped onion
1 tablespoon melted butter
1 teaspoon mustard
3/4 teaspoon seafood seasoning (I use Old Bay)
1 cup seasoned bread crumbs
2 tablespoons vegetable oil

In a bowl, combine zucchini, egg, onion, butter, mustard and seafood seasoning. Shape into five patties. Coat with bread crumbs. Heat oil in frying pan. Brown 4 minutes on each side. Drain on paper towels. And enjoy. I serve it with a little tarter sauce.

New idea to go with this recipe. Instead of making cakes, put the filling in to a portabella mushroom cap.top with Marinara sauce and sprinkle with a little parmesan cheese. Put on grill or in oven at 350 for about 30 minutes. We made this last night and they were fantastic!!!!! After 15 or 20 minutes in the ovan you may need to drain excess liquid. Eat and enjoy.

Omg! That sounds so good.
The Admiral makes stuffed mushrooms, I'm going to carefully suggest she add crab to the stuffing as an hors d'euovre.

I got a chuckle at this one. "Marina Sauce". I think you meant Marinara but... that said, I pictured "Marina Sauce" as taking a cup of the water that gets caught in the corners by the docks and pouring it over your food. Mmmmm, that's good Marina Sauce!!!

Good afternoon Pete. Just to make sure, though it may taste like it, there is no crab meet in this recipe. Just shredded zucchini in place of crab.
