Here's a quick and easy salsa recipe that is great on the boat in the summertime.

All of this is generally 'to taste'...

4 decent size tomatoes cut up

1 white onion cut up

1/2 Jalapeno pepper (more as desired to taste)

3 fresh cloves of garlic, minced

Generous bunch of fresh cilantro, diced

Juice of a good sized lime

A couple shakes of some quality extra virgin olive oil

Salt to taste

Toss all of the above ingredients into the Cuisinart and 'pulse' until desired consistency is reached. Chill in the refrigerator until ready to serve with some fresh 'restaurant style' tortilla chips.

Enjoy with an ice cold Corona (with lime).
