This is a simple technique that people rave about so I don't tell them how easy it is. You can make this on a grill, but a george foreman it works best.

Season a skin-on fillet with paul prudhomes "Magic Salmon" on the meat side.

Place a fillet skin side up on a hot foreman grill on high. (kokanee works great, copper river even better)

grill 4 minutes.

shut off grill, peel off skin.

smear a tablespoon of Jack Daniels horseradish mustard on the under-skin meat.

drop the grill top for 1 minute.

serve.
