I am new to the forum and thought I would share this with you.
I nice sized salmon fillet. lightly salt and pepper.
Sear for about 30 seconds each side in a hot skillet with olive oil.
Remove from skillet and put in cassarole skin side down, cover in your choice of tomato basil tomato sauce (I use Classico) crumble fresh feta all over and put in oven at 325f for about 20-25mins depending on thickness. serve with your choice of side, salad, potato, pasta or ??? absolutely yummy.
For the grill.....Take piece of aluminum foil and roll up the four edges a little. Place fillet on foil, skin side down. In container, melt butter and mix with minced garlic (or can use garlic powder) and soy sauce and a little brown sugar. Brush mixture on fish and place fish onto grill and close the lid. A little ways into cooking, brush on some more. When the fish is cooked, lift the fish off of the skin. The skin will stay stuck to the foil. Roll it up and toss.
