Sorry it took so long but I had to wait to down load my pictures.
So lets smoke some crab! But we need a few things first.
1. Boating tee shirt now I do not have a BOC shirt hint hint :D
2. cooler of beer, I like the cheap stuff so no hating :D
3. charcoal
4. and mesquite wood (different strokes for different folks) so pick the wood you want to use.

Now before we get to the crab we are going to cook up some Squid Tubes.
Now i was taught to cut the tube open and wash but i just learned to just turn it inside out and wash.
1. wash tube
2. cut cross hash marks into tube
3. soak in marinade ( i use red label soy sauce) which is the good stuff.
4. if you use the tube method you can stuff with what ever you want.
5. only soak for about 30 minutes tops.
6. place on pitt, cook time is about 35 to 40 minutes with out direct heat.
6a. if you cook on direct heat cook time is about 6 minutes on each side but a good guide is if when it starts to curl up it is just about ready.

Ok now you will see some other meat on the pitt so i will share recipe also
These are Korean style pork chops but you can do beef ribs like this also but have them cut across the bone about 3/8 of an inch thick.
1. take one cup of soy sauce and and mix in brown sugar in until it is sweet.
2. marinate meant for no more than 30 minutes. There is a reason for this ok
3. slap on smoker cook time is about 45 minutes but keep moist by basting.

ok now we are to the Blue Crab
1. do have sword fight with blue crab they are ninjas of the sea :D:kidding
2. shock crab in ice or stick in the freezer until they are just not moving.
3. Clean crab now i have stated this already you have to clean them before cooking on open flame or indirect heat. Now i did this two ways just to see how it works but i am going to tell you the best way
a. pop the bottom of the crab and then peal the top of the shell off. This is not hard but be prepared for juices and guts flinging out.
b. you can use your finger or a knife remove the lungs or gills how ever you want to call it.
c wash out the guts and remove the face of the crab it will just pop off

4 I have several marinades that i will share
1. one can of beer, about half a stick of butter melted, Cajun spices of your choice, black pepper, and i like extra red pepper, 1/4 cup Worcestershire sauce
now i soaked for about 45 minutes while every thing else was cooking

Here are some other sauces we tried the next night
Korean BBQ sauce ( you will have to find an Asia food store to get the good stuff)
red pepper about 2 table spoons but use your own judgment, 1/4 cup of beer, about 1 1/2 cup of BBQ sauce and one and a half table spoon of garlic
2. mix up and put crab in
3 toss on the pitt
now we did bast about 3 times so it caramelized
cook time about 40 minutes

This next sauce was very good
1 cup sesame seed oil
2 table spoons sesame seed
1/2 cup red label soy sauce

same thing mix in the crab and toss on the pitt bast a few times

ok here is the final sauce we used and i think it was very good

Jalapeno jelly and white wine
pick a wine that is not too sweet because the jelly will do the trick.
this took some work getting the jelly to mix with the wine so there is some mixing time here
same thing toss crab in and then on pitt same cook time and bast a few times

this is the only picture that i have of the crab cooking, they did not last long it was great! The meat was easy to get out, most of the when you pulled the leg it all cam out of the body. Claw meat also was very easy to get out. oh for a cooking guide on times you can go off the shell it will turn red also as it cooks.
